Edith Elaine Henry, 78 of St. Anthony passed away Sunday, January 23, 2022 at home surrounded by family.

She was born January 18, 1944 in Ashton, Idaho to Lester and Drucilla Wright Dixon. She attended Ashton schools and graduated from North Fremont High School.

She worked for several years during potato harvest for Cherry Farms. It was while working in the potato cellar that she met one of the truck drivers, Jack Henry. They were married December 22, 1970 in St. Anthony, Idaho. They made their home for a time in Ashton and then settled in St. Anthony where she has resided until her passing.

She enjoyed picking huckleberries and choke cherries. She enjoyed cooking and sharing with others, no one ever left her home hungry. She volunteered for many years at food distribution locations in St. Anthony.

The thing she loved most was spending time with her grandchildren.

Edith is survived by her husband, Jack Henry of St. Anthony; Children, Todd Dixon (Brenda) of Challis, J.D. Henry (Mary) of St. Anthony, Jackie Parslow (Ben) of Montpelier, and J.W. Henry (Christy) of Idaho Falls; a brother Elzie Dixon of Utah; a sister Karen Warner (Larry) of St. Anthony; grandchildren, Nichole, Allie, Natalie, Harley, Mason and Ethan. She was preceded in death by her parents, 8 siblings, Mary Lee, Frances, Jerry, Arnold, Carol, Dean, Alfred and Chris.
